We are in the midst of winter and cooking healthy food for your family is sometimes (actually, often) the last thing you feel like doing at the end of the day. A big bowl of pasta smothered in cheese is more to mine and Luke’s liking.
But I made a great discovery the other day – Luke loves soup. Not only is this a good way to get him eating vegetables, but it also means we eat the same dinner. Here is a great winter warming soup for your whole family from the lovely moms at Healthy Habits, they are dieticians so it is proven to be healthy!
Ingredients – Serves 6
2 tablespoons olive oil
1 medium onion, finely chopped
1 large clove garlic, finely chopped
1 tablespoon thyme
2 cups chicken stock
2 cups vegetable stock (or you can just use 4 cups of one kind of stock)
2 potatoes, peeled, rinsed and cut into 1.5cm cubes
4 large zucchini, cut into 1cm slices
½ cup basil, chopped
¼ cup natural yoghurt
150g feta, crumbled
Salt and pepper, to taste
- Heat the olive oil in a large saucepan. With the lid slightly ajar, sweat the onions on low heat for five minutes. Next, add the garlic and thyme and cook for one minute.
- Turn the heat up to medium and add the potato. Cover and cook for eight minutes. Stir the potatoes occasionally to ensure they don’t stick.
- Add the zucchini and cook for two minutes. Add the stock and bring to a boil. Reduce the heat and simmer with the lid off until the potato is soft when poked with a fork.
- Stir in the basil and yoghurt. With a stick blender or food processor, blend the soup until it is smooth. Season with salt and pepper. Add the crumbled feta and stir through.
And that’s it. Done. Now to celebrate the fact that you cooked healthy food for your family in the midst of winter, why not have a piece of cake?
