I’ve seen this 2-ingredient crumpet recipe flying around the interweb for a while, but never once did I think it was actually going to work.
I don’t even know what made me try it. I felt like I was setting myself up to fail right up until the point where I realised I hadn’t.
They actually came out resembling crumpets, which was impressive in itself, but the most important thing for me was the fact that my little man smashed them in his face.
I’m not saying they’re exactly like crumpets, hence the “”. The texture is more like French toast, but they’re damn tasty and super quick to make. Seriously, this intro is longer than the recipe itself.
I adjusted the original recipe an incy bit (I’m a rebel like that) so it’s gone from 2-ingredient crumpets to 4-ingredient crumpets, but I think you’ll manage.
1 tbsp flour (I used coconut)
1 pinch of baking powder
Mash the banana in a bowl. Add the egg, flour and baking powder and whisk together. Warm a non-stick frying pan to medium. Spray with oil (I used coconut). Cook palm-sized crumpets until they bubble, and then flip. Leave on th heat for another couple of minutes and then serve – with a little maple syrup if you can handle the sugar rush…
4-ingredient crumpets, done.
You’re going for a 1/3 of a cup of mashed banana per egg.
If you cook these on a high heat the inside will stay soggy. A low to medium heat is key.
